Tastes great with a dollop of plain yogurt and a little or honey or maple syrup drizzled on top. If you are making this recipe for an infant under 1 year, omit the salt, sugar, honey and maple syrup.

This Berry Breakfast Bake tastes great with a dollop of plain yogurt and a little or honey or maple syrup drizzled on top. Ingredients
- 1 ¼ cups old-fashioned rolled oats*
- ¼ cup red lentils
- ¼ cup ground flax seeds
- 1 tsp baking powder
- 2 tsp cinnamon
- ¼ tsp salt
- 2 cups vanilla soy milk (unsweetened)
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- ½ cup shredded coconut (unsweetened)
- 1/3 cup sugar
- 1 large egg
- 2 tbsp avocado oil
- 2 tsp vanilla extract
- 1 cup plain yogurt (optional; garnish)
- ½ cup pure maple syrup or honey (optional; garnish)
Instructions
- Preheat the oven to 375°F.
- In a 9x9-inch baking pan, combine the oats, lentils, flax seeds, baking powder, cinnamon, and salt. Scatter the berries and coconut evenly throughout.
- In a separate bowl, whisk together the almond milk, sugar, egg, melted coconut oil and vanilla.
- Pour the wet mixture over the dry and gently fold to combine and evenly distribute.
- Bake for 40 minutes, or until the top is lightly browned and the casserole is firmly set.
- Serve warm, garnished with a ¼ cup of yogurt and a drizzle of maple syrup (optional).
